From about 65% of the milk from their own cows, they make real, raw milk farmers cheese (='Boerenkaas'). Boerenkaas is a European protected name according to GTS: Guaranteed Traditional Specialty. Main features are that the cheese is made on the farm from raw milk. Cheese making from raw milk is special and provides the farmer's cheese with a rich taste sensation. In addition, they also use wooden barrels and linen cloths for the preparation. Also special is that they crumble the curd before it enters the barrel. Therefore, instead of a single hole, you will find all kinds of small holes in the dairy of the cheese. A labor-intensive process, but Erik Rotteveel, the cheesemaker and farmer, is convinced that this benefits the taste!
