These cheeses have matured naturally in the ripening warehouse for about a year and a half. Thanks to the special moist and clean atmosphere in the ripening warehouse, the cheeses do not dry at all.

This tea is a class of its own. The distinctive mild Oolong gets its light character from elaborate production: The tea leaves are carefully scrolled by hand and then dried in roast pans in order to stop the fermentation process. A real rarity.
